Momos! The name of this amazing dish sets my pulse racing. I am a huge fan, rather huger-than-huge of Momos. I simply love them, no matter in what form they are, be it Tandoor, Steamed, or Fried. Momos are one thing that I can have it at any given hour of the day or night, or in any mood that I am in. It was then when I thought to make Momos, of a kind, which people can have during their fasts too. Hence, I just experimented with ‘Falhari Momos’. I tried this new recipe at home this weekend, and yes, it involved Momos. As the festive season is approaching, starting with Navratri, where a lot of people observe fast, I thought I should try something that people can savour during this period. Main Ingredient: Falhari Maida and Potato | Course: Appetiser
- Cook Time: 45 minutes
- Level of Cooking: Medium
- Taste: Savoury
Ingredients:
- Falhari Maida (Falhari Atta) – 1 Cup
- Water – ½ Cup
- Oil (For Frying)
- Cumin Seeds a.k.a Jeera – 1 Teaspoon
- Rock Salt a.k.a Sendha Namak – As per taste
- Red Chilli Powder – ½ Teaspoon
- Green Chilli (Optional) – 1 (Chopped)
- Corriander – 3 Tablespoons (Finely Chopped)
- Potatoes – 3 (Boiled and Mashed)
- Peanuts – ½ Cup (Roughly Grinded)
Method:
- Make soft dough from Maida and Water. Let it rest for 15 minutes.
- Heat some Oil in a pan. When the oil is hot enough, add Jeera (Cumin Seeds) to it and let them splatter.
- As soon as the Cumin Seeds splatter, add the boiled and mashed potatoes to the pan.
- Then add all the Spices and Peanuts to the pan and give it a nice mix.
- Keep it on low flame for 5 minutes and let it cook. Once cooked, allow it to cool down a bit.
- Now, pour some oil (for frying) in another pan to heat.
- Work on the dough, and make some small balls from it.
- Roll those balls and shape them into round and thin chapattis.
- Fill in the Potato mixture in the centre of those chapattis, and then make a ‘potli’ (bag or sack) of those mixture filled chapattis.
- Make sure it is closed and secured from all the sides.
- Once the Oil is hot enough turn the flame low and fry the ‘potlis’ (the Momos) in the Oil until they turn golden.
- Strain them out of the Oil pan on to an absorbent paper.
- Serve these hot Momos with sweet curd and Falhari Green Chutney.
Chef’s Tip:
- Be careful while frying.
- You can add or reduce spices as per your choice.
