Recipe of Watermelon Rind Curry

  • Serves: 4 persons

Homemade Tarbuj Ke Chilke Ki Sabzi
Ingredients:
  1. Watermelon Rind (Chilke) ‒ 1-2 (Chopped)
  2. Mustard Oil ‒ 2 tablespoons
  3. Mustard Seeds (Rai) ‒ 1 teaspoon
  4. Cumin Seeds (Jeera) ‒ 1 teaspoon
  5. Fennel Seeds (Saunf) ‒ 1  teaspoon
  6. Asafoetida (Hing) ‒ A Pinch
  7. Salt ‒ As per taste
  8. Onion ‒ 2 (finely chopped)
  9. Garlic ‒ 2-3 pods
  10. Green Chilli ‒ 1 (Optional)
  11. Turmeric Powder ‒ 1 teaspoon
  12. Coriander Powder ‒ 1 teaspoon
  13. Red Chilli Powder ‒ 1 teaspoon
  14. Water ‒ Half to 1 cup
  15. Maggi Masala Powder ‒ 1 teaspoon
  16. Moong Dal ‒ Half cup (soaked in water for 1-2 hours)
Watermelon Rind Curry Recipe
Method:
  1. Take a pan and add 2 tablespoons of Oil
  2. When heated, add mustard seeds (Rai), Cumin Seeds (Jeera) and Fennel Seeds (Saunf) in the pan
  3. Once they are heated and they splatter, add a pinch of Asafoetida (Hing) into the mix
  4. Turn the flame medium, and add finely chopped Onions, Garlic pods and Chilli if you want it to be a bit spicy
  5. Give it a nice mix for a minute until the Onions turn lightish brown
  6. Add the soaked Moong Dal into pan and give a nice stir again
  7. Then, add chopped Watermelon Rind (Chilke) in the pan
  8. You have to then add Turmeric powder, Coriander powder, and Red Chilli powder
  9. Add Salt as per your taste
  10. Add half to 1 cup of water and give the entire mixture a nice mix
  11. Cover the lid of the pan, and turn the flame to medium for some time till the Watermelon pieces turn transparent
  12. Add Maggi Masala to the mixture and give it a final stir. Cover the lid again for a minute
  13.  Your Watermelon Rind Curry a.k.a ‘Tarbuj ke Chilke ki Sabzi’ is ready!
  14. You can serve it by garnishing it with fresh Coriander leaves and with any Indian bread too
